🍞 Scrumptious Quinoa Loaves

Ingredients:

  • 1 cup uncooked quinoa
  • 1 1⁄2 cups water
  • 1 cup carrot, grated
  • 1 cup chopped onion
  • 1 cup celery, diced
  • 1 cup white button mushrooms, grated

Instructions:

  1. Bring water to boil and add quinoa. Immediately cover and remove from heat.
  2. Saute' onion, mushrooms, carrot, & celery until soft in a small amount of vegetable broth. In large bowl, combine with cooked quinoa.
  3. Place in loaf pan that has been sprayed with non-stick spray.
  4. Cover and Bake at 350Β°F (180Β°C) for 45 minutes.

Ingredients:

  • 1 1/2 cups flour
  • 1/2 cup heavy cream
  • 1 stick butter
  • 1/2 cup Parmesan cheese, grated
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/8 teaspoon freshly grated nutmeg
  • 2 eggs + 2 egg yolks
  • 3 Tablespoons parsley, chopped (divided)
  • 12 cups reduced sodium chicken broth
  • 1 1/2 teaspoons dried tarragon

Instructions:

  1. Over low heat, use a spoon to combine the flour, cream, butter and Parmesan cheese into a dough.
  2. Beat together the salt, pepper, nutmeg, eggs and egg yolks and 1 tablespoon of parsley, and pour it on top of the flour mixture.
  3. Put the mixture into a piping bag and pipe pea-sized balls onto a parchment lined tray (let it stand for about 30 minutes)
  4. In a large pot, heat salted water until it boils.
  5. Gently drop in all the dough peas. Cook for 5 minutes, then remove them with a slotted spoon and add to the warm chicken stock.

🫘 Abacus Seeds

Ingredients:

  • 150 gr taro peeled
  • 60 gr tapioca starch
  • ΒΌ tsp salt
  • 35 gr hot water
  • 2 Tbsp cooking oil
  • 100 gr ground pork
  • 20 gr dried shrimp soak in warm water until soft
  • 4 wood ear mushrooms soak in warm water until tripled in size and cut into strips
  • 1 stalk green onions (white part only)

Instructions:

  1. Cut tapioca into large chunks and steam over high heat
  2. Mash the taro while it's still hot. Add oil, salt, tapioca starch. Gradually add in the hot water and use a spoon to stir.
  3. Divide the dough into 4 equal balls. Work with one ball at a time while keeping the rest covered, roll the ball into long log (about 1-inch in diameter). Then cut into 1- 1.5 inch pieces. Roll each piece into a smaller ball.
  4. Bring a large pot of water to a boil, add a pinch of salt and 1 Tbsp of cooking oil. Add in the abacus beads and stir a little bit. Remove from the heat and drain off the water.
  5. Transfer to a bowl of cold water to stop the cooking process and to firm up the abacus beads. Toss with a little bit of oil to prevent them from sticking to each other
